Cook with what's in season


Zucchini Slice

1 TBSP Olive oil

1 onion, finely chopped

2 cloves garlic, crushed

4 rashers of Bacon, chopped (optional)

450gr of Zucchini, grated

200gr Feta, crumbled

200gr Ricotta

40gr Parmesan, grated

salt and pepper

6 Eggs

1c self raising Flour


Heat oil in fry pan and fry onions, garlic and bacon

Place eggs in bowl and whisk, add zucchini, ricotta, feta and parmesan.

add all other ingredients and combine


pour in, lined with baking paper, tray (20x30cm)

bake at 180c for 40-45min


this slice is great to please a crowd or freeze


serve with a fresh garden salad
